A favourite at the moment due to the cold weather is a simple seafood laksa recipe I have honed. This doesn&#8217;t take long to prepare and doesn&#8217;t take long to cook and its delicious.<\/p>\n<p><strong>Prep Time: 5 mins<br \/>\n<\/strong><strong>Cook Time: 10 mins<br \/>\nServes: 4 Adults <\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span><\/p>\n<ul>\n<li>1 jar of laksa paste (I use a\u00a0Valcom Paste Laksa 230g jar)<\/li>\n<li>1 Can of coconut milk (lite or full up to you)<\/li>\n<li>1\/2 cup of water<\/li>\n<li>1 packet of\u00a0rice vermicelli\u00a0(usually 6 individual balls of vermicelli in the pack)<\/li>\n<li>400 grams seafood mix (john west prepackage is decent and well priced)<\/li>\n<li>100 grams mushrooms<\/li>\n<li>1 carrot (decent sized)<\/li>\n<li>1 red or green capsicum<\/li>\n<li>2 bunches bok choy<\/li>\n<li>2 tablespoons olive oil<\/li>\n<\/ul>\n<p>Optional:<\/p>\n<ul>\n<li>1 stalk with plenty of leaves of\u00a0coriander\u00a0for garnish<\/li>\n<li>2 tablespoons of crushed peanuts<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Method<\/span><\/p>\n<p><em>Prepare<\/em><\/p>\n<ul>\n<li>Prepare the rice\u00a0vermicelli by placing the required amount (4 balls) into a mixing bowl and adding warm water\u00a0\u00a0and let it sit till ready for serving then drain (15 mins or so)<\/li>\n<li>quarter the mushrooms<\/li>\n<li>slice the bok choy into decent sized pieces<\/li>\n<li>slice the\u00a0capsicum\u00a0into \u00a0pieces about the size of an Australian 10 cent piece<\/li>\n<li><a title=\"Julianne carrots\" href=\"http:\/\/www.taste.com.au\/how+to\/articles\/1007\/prepare+julienne+carrots\" target=\"_blank\" rel=\"noopener noreferrer\">julienne<\/a><a title=\"Julianne carrots\" href=\"http:\/\/www.taste.com.au\/how+to\/articles\/1007\/prepare+julienne+carrots\" target=\"_blank\" rel=\"noopener noreferrer\"><\/a> the carrot<\/li>\n<\/ul>\n<p><em>Cooking<\/em><\/p>\n<ol>\n<li>Heat the oil in a wok until its hot<\/li>\n<li>Add the laksa paste and cook until it is fragrant<\/li>\n<li>Add the harder vegetables first and fry for about a minute<\/li>\n<li>Add the can of coconut milk and the water<\/li>\n<li>Add the seafood mix and mushrooms<\/li>\n<li>Bring to the boil stirring occasionally, check to ensure the seafood is cooked. (You know when the fish starts to flake)<\/li>\n<li>30 seconds before removing it from the heat stir the bok choy through<\/li>\n<li>Let it sit for a few minutes<\/li>\n<\/ol>\n<p><em>Serving<\/em><\/p>\n<p>Place the vermicelli in the bottom of each deep bowl and then spoon the laksa into the bowls. Place a couple of the\u00a0coriander\u00a0leaves on top and a sprinkle of the crushed peanuts (if you want).<\/p>\n<p><em>Notes<\/em><\/p>\n<ul>\n<li>If you want to make it hotter you can add chilli paste or fresh chilli to your desired heat level.<\/li>\n<li>You can switch the seafood out for chicken of tofu. I&#8217;ve done the tofu option many times but I assume the chicken one should work.<\/li>\n<li>You can also add more vegetables if you like or remove the meat all together, its all up to what you like.<\/li>\n<\/ul>\n<p>I don&#8217;t have a photo of this just yet, but next time I make it, I&#8217;ll make sure it features on my instagr.am.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been pretty busy lately so I&#8217;ve been looking for quick delicious meals that I can make in under half and hour.
